I, Lia Kotorashvili, have been working at the GTU Food Industry Research Institute since 1983. I am currently a Senior Research Fellow in the Food Quality and Safety Research Division. In 1982 I graduated with honors from the Faculty of Chemical Technology of the Georgian Technical University and was awarded the qualification of Engineer-Chemical-Technologist. In 2009 I defended my dissertation on the topic: "Development of a rational technology for obtaining natural flavorings of alcoholic and non-alcoholic beverages from basil raw materials", I was awarded the academic degree of Doctor of Food Technology. I have taken qualification courses - at the Educational-Scientific Institute of Standardization and Metrology, specialty: product certification, certification body and accreditation of the examination laboratory (with honors). My field of scientific interest is to study food safety and security processes, to set norms; Selection of methods for detecting product counterfeiting; Natural food additives: dyes, flavorings, thickeners, etc. Development of rational production technologies and definition of their fields of application; The main directions of creation and commercialization of innovative technologies in the Georgian food industry, etc. Sh. Among the works done by me are the following: • Investigation of the scientific basis for the production of natural food flavorings; • Development of scientific basis for the process of steam distillation of essential oils with water; • Investigation of scientific bases of Georgian type wines; • Development of realistic technology for obtaining natural grape dyes; • Development of technologies for obtaining bioactive extracts from laurel and eucalyptus raw materials; • Research on natural bread improver technology; • Development of rational technologies for the production of environmentally friendly food additives: dyes, flavorings, thickeners; • Development and introduction of essential oil lavender care-growing and processing technologies (World Bank grant); • Development of liquid sugar production technology (GTU Grant); • Development of technology for making natural bread additive (STU Grant); • Development of realistic technology for making honey wine; • Impact of pesticides and poisonous chemicals on the quality and safety of grapes and their processed products. During my scientific career I have published 91 scientific papers, including 1 monograph, 1 textbook. In addition to scientific research, I also engage in combination activities. I work as a pedagogue at the Georgian Technical University and Tbilisi Iv. Javakhishvili State University - Faculty of Exact and Natural Sciences. I received a silver medal at the USSR National Economic Achievement Exhibition in Moscow in 1988. Since 2019, I have been elected a member-correspondent of the Georgian Academy of Engineering.

The chemical composition of lemonian basil’s essential oils spread in Georgia had been studied at the Scientific Research Institute of the Food Industry. By using the gas-liquid chromatography method there had been identified 26 compositions in lemonian basil essential oil. The existence of large quantities of citril adds a pleasant aroma in evgenian basil’s essential oils, which would enable us to substitute oil with the lemon oil used in food.
