Article`s novelty, specialty and singularity are conditioned by the research and cataloguing of genetic resources of the medicinal and aromatic plants are unified in a single complex model, monitoring, including unique plants and those on the verge of extinction, ex-situ and in-situ/on farm conservation; diagnostics of the indigenous-endemic and collection material for the purposes of selection of the plants distinguished for their pharmacological and farming peculiarities; enrichment of seed bank and its inclusion into the international exchange programs; study of the present ethnopharmacological peculiarities; establishment of the data base for the purposes of sustainable use and conservation of the aforementioned plants in certain regions of Georgia with different ecosystems.

It is necessary to create a berry crop breeding modern system in Georgia, in particular blackberry, which initial stage presents research laboratory test-tube plant (multiplication, upgrade). Receiving seedlings are much cheaper than imported. Also, It will be created in vitro blackberry`s test tube plants by using the biotechnology methods. The obtained results allow us to keep local geneplasm forms. In accordance with the new biotechnological methods spread in the world will be possible to obtain the best quality planting materials, which will help to develop this field and to provide quality product to market in Georgia. Natural pigments - phenolic compounds are characterized by powerful antioxidant action, which output the human body can not, therefore, it is necessary to use of such products for human food, which contains significant amounts of these compounds. Berry’s, in particular leaves of remontant blackberry, fruit, fruit juice, extract, tincture of vegetable raw materials are main source of phenolic compounds.

Along with ethno botanical characteristics investigation, it has been identified that in some regions of Georgia it is actual to use precious dietary additives for improving bread taste and quality. Among them interesting for us turned out Cephalaria (Cephalaria syriaca), adding of which gives the bread specific bluish colour, softness and pleasant taste, and increases the duration of storage. Among the biologically active substances of cephalaria contents of protein and carbohydrate are 18.46% and 43.43%, and the fat content is 17.76%, energy value is quite high - 422 kcal 100 g. Bread baked in proportion of 40% triticale flour + 60% wheat flour, with added cephalaria gives better organoleptic indicators, nutritional value and characterized by the duration of storage, i.e. cephalaria can be used as a natural herbal means for improving the dough rheological and bread's properties, which at the same time increases the duration of storage bread on the background of quality preservation.
